My CL taught me how to make agar agar mooncakes. It was quite easy or perhaps it seems easy to me coz im not the one doing it, kekeke...im only responsible for taking pictures :p
Ingredients:
1 packet of "Happy Grass" agar agar powder
700~800g yam
220g sugar
1 coconut
1 red dragonfruit
1200cc of water
1 heapful of potato starch
Method:
1) Peel the yam, rub some salt onto the yam and then rinse off. Slice the yam into pieces and steam.
2) Add 500cc of water into the grated coconut, squeeze the coconut to get 700cc of coconut milk. Leave aside some coconut milk for frying the yam.
3) Mash the yam once the yam is cooked
4) Put some oil and coconut milk into the pan. Pour in the mashed yam and fry the yam. In between, add some sugar and potato starch. *Sugar put to taste*
5) After frying the yam, scooped up and set aside.
6) Cook 700cc of water with the agar agar powder and sugar. Once the sugar melts, pour in the coconut milk. Turn off the fire once coconut milk starts to boil.
7) Mash some dragon fruit to get the colour. Mix some of the mashed dragon fruit with some of the coconut-agar agar mixture. Pour into mould
8) Make yam patties and put into the mould
9) Lastly, pour the remaining coconut-agar agar mixture into the mould
10)Leave the mould into the fridge to chill
